Winnow develops digital tools to help chefs run more profitable, sustainable kitchens by cutting food waste in half. Based in Dubai, Ignacio leads operations in the MENA region working with Emaar, Majid Al Futtaim, Accor and Rotana amongst others. Prior to Winnow, Ignacio held senior F&B positions at Hilton and also ran fine dining restaurants in his native Spain.
